Blätter von Carpinus betulus enthalten ein breites Polyphenolspektrum - Gallo- und Ellagitannine, Catechine/Procyanidine, Flavonol-Glykoside und cyclische Diarylheptanoide (Isolation and quantification of diarylheptanoids from European hornbeam, PMID 34973466, J Pharm Biomed Anal; detailliertes Polyphenolprofil und Antioxidanzkapazität der Blätter: Industrial Crops and Products 2016, ScienceDirect S0926669016302631). Die Blätter zeigen in vitro eine hohe antioxidative Kapazität. Kontrollierte Pferdestudien fehlen; Hainbuchenlaub gilt praktisch als schmackhaftes Browsing-Laub, die Einordnung ist traditions- und botanikbegründet.
