Mechanism

Blätter von Fagus sylvatica enthalten vor allem Hydroxyzimtsäure-Derivate (Chlorogensäure-Klasse) und Flavonoide mit antioxidativer Aktivität (UHPLC-HRMS Analysis of Fagus sylvatica Leaves, 2021, PMC8301150), die Rinde liefert weitere phenolische Bioaktivstoffe (PMC6769934). Sicherheitsrelevant: Bucheckern (Früchte und Perikarp) enthalten Saponine, Oxalsäure und das schlecht charakterisierte, giftige Prinzip Fagin; in größerer Menge sind sie für Pferde und Wiederkäuer unverträglich (Verdauungsstörungen, Kolik-Risiko). Junge Blätter gelten dagegen als mild und schmackhaft. Kontrollierte Pferdestudien fehlen; wegen der toxischen Eckern wird die Sicherheit hier bewusst höher (yellow) statt green eingestuft - Abweichung vom Stub mit Begründung.

Cautions

  • · Bucheckern (Eckern/Mast) in Menge toxisch (Fagin, Oxalate, Saponine) - Verdauungsstörungen/Kolik; Aufnahme im Herbst begrenzen.
  • · Ältere/verfärbte Blätter zurückhaltender einsetzen als junges Laub.
  • · Verwechslungssicher bestimmen (Abgrenzung zu Eibe, Bergahorn/Hypoglycin A, Robinie, Eiche).
