Mechanism

Allicin entsteht beim Zerkleinern von Knoblauch aus Alliin durch das Enzym Alliinase und ist ein reaktives, instabiles Thiosulfinat. In vitro werden antimikrobielle, antioxidative und gefaessmodulierende Effekte beschrieben. Kontrollierte Pferdedaten fehlen; wichtig ist die knoblauchspezifische Sicherheitsfrage: Schwefelverbindungen des Knoblauchs koennen bei hoeherer/dauerhafter Aufnahme oxidative Schaeden an Erythrozyten (Heinz-Koerper-Anaemie) verursachen.
